Ingredients (Measurement Conversion Calculator) Cinnamon - 1 inch stick
Green peas - 500 gm
Bay leaves - 2
Mace (Javetri or Jaitri) - 1
Cardamom - 4
Onion - 50 gm, finely chopped
Basmati rice - 500 gm
Cloves - 4
Salt - to tast
Ghee / Butter - 50 gm
Directions
Wash the rice and keep soaked in water for 30 minutes. Drain the water afterwards. Heat butter / ghee in a pan and fry the onion until brown. Drain excess butter and keep the fried onions aside. Add cinnamon, cardamom, cloves, bay leaves and mace to the oil. Add rice and fry for 2-3 minutes. Add green peas and fry for further 3 minutes. Add 1 litre water and salt to the rice. Cover and cook at low heat. Remove from heat when the rice is well done. Garnish with fried onions. Serve hot with any Indian vegetarian or non-vegetarian curry.
